The Pro-M is designed to work with a stock EEC-IV so I don't think you have to mess with the MAF table on the EMS. I would recommend plugging the MAF in and trying to start the car with the preloaded MAF values.
I know nothing about the AEM software, but I do think you would want to input the flow curve information from the manufacture of the MAF sensor. The default curve might start the car, but unless they have a way to calibrate that curve you would need to have the o2 correction set high.
